Foods from Tsuruga and Wakasa Wakasa Beef

This traditional Japanese beef has been consumed in the prefecture since the Meiji era (1868-1912), and is known throughout Japan as the finest beef in the country for its extremely fine and flavorful sashi. Only beef with a particularly high oleic acid content (55% or more in the beef fat) is certified as "Three-Star Wakasa Beef.
